Citrus Chicken Marinade

Ingredients:

Juice and grated zest of ½ of lime

½ of small orange

1 tablespoon of grated fresh ginger

1 garlic clove, minced

1 green onion, white and light-green parts only, sliced into ¼-inch rounds.

2 boneless, skinless chicken breasts

Method:

Place lime and orange juice, zest, ginger, garlic, and scallion in a small bowl, and whisk to combine.

Place chicken in a shallow dish, cover with marinade, turning to completely coat.

Transfer to refrigerator, and marinate 1 hour.

Remove chicken 30 minutes before cooking.

Heat grill, or grill pan over medium-high heat.

Remove chicken from marinade and season with salt and pepper.

Grill until completely cooked all the way through.

Transfer chicken to cutting board and cool slightly.

Cut chicken on the bias and serve with your favorite vegetable or atop your favorite salad.

Simple Organic Egg Salad

Serves 2

Ingredients:

3 hard boiled eggs, sliced and chopped with an egg slicer

2 tablespoons organic mayonnaise

½ small shallot minced

1 teaspoon fresh basil

6-8 cherry tomatoes, sliced into quarters

½ of an avocado, seeded and sliced thin

1 cup thinly sliced red and or green cabbage

Salt (preferably kosher or sea salt)

Freshly ground black pepper

Method:

Combine eggs, mayonnaise, shallot and basil in a bowl and salt and pepper to taste.

Add sliced tomatoes and stir to combine.

Place ½ cup of cabbage in the center of two plates.

Lay avocado slices across the top of the cabbage.

Top with egg salad and serve.
